• 8 large dried anchovies (with guts and head removed)

  • dried kelp (5 x 6in sheet)

  • 8 cups water

seasoning paste

  • 6 garlic cloves, minced

  • 1 tbsp hot pepper paste (gochujang)

  • 2 tbsp hot pepper flakes (gochugaru)

  • 1 tsp soy sauce

  • 1 tsp sugar

  • 2 tbsp water

stew fillings (really anything you want)

  • pork belly

  • cabbage

  • onion

  • green onions

  • kimchi

  • any other veggies of your liking

  • spam

  • polish sausage

  • tofu

  • rice cakes

  • ramen


prepare stock

  1. add water, anchovies and kelp into a large pot

  2. cover pot and cook for 25 minutes over medium high heat

  3. strain the stock of all the anchovies and kelp

mix seasoning paste

  1. combine all ingredients and mix well

cook and serve

  1. arrange all the stew fillings at the bottom of a shallow pot

  2. add the seasoning paste on top

  3. add in stock

  4. you can cook the stew over a propane gas and enjoy while it continues cooking (adding more stock as the stew reduces)
