When I was on the Paleo diet, there were numerous times that I craved junk food, primarily chips. So, instead of messing up my diet over some overly processed and fatty foods, I decided to try and find a recipe that could help me make some good ol’ crunchies. However, this wasn’t the first time I was looking up recipes for homemade chips. In the past, I had tried to bake, fry, and all other sorts of cooking methods to make chips that were actually CRISPY. Either the chips were too thick, or they burned on the edges before the middle was cooked, or the whole thing just ended up in a sad, soggy thin potato slices. So, my primary focus was to find a recipe that could actually get me some crispiness. I was pretty shocked when I discovered this recipe. It’s UHMAZING. AND, it’s quick. SO. Quick.
I know that many of you don’t like to use microwaves, or prefer not to. I’ve never tried using the oven with this recipe, so I can’t guarantee the chips will be as crispy. Maybe if you give it a shot and find a way, let me know, and I can share it with everyone else :)
I even have PROOF OF CRISPY-NESS. Please excuse the lack of editing – I was too eager to share the recipe to care about making it look nicer.
- Sweet potato
- Salt (or any other seasoning)
- Olive oil spray can
- Use a mandolin and slice up your sweet potato (try to find one that has an even girth throughout the entire length of the potato so you have evenly sized chips)
- Cut parchment paper the size of your glass plate inside the microwave
- Lay the chips in a single layer on the parchment paper
- Lightly spray with non-stick spray and salt them
- Microwave on 100% power for 2 minutes 30 seconds (Please note:This measurement was for MY microwave, so please be aware of your own) You will know they are done when they start to lightly brown, but do not wait till they entirely brown — that would mean it burnt)
- Let the chips cool, and they will turn crispy :)
