I have an extremely big weakness to fries, so eating with the Paleo diet can be a bit frustrating at times. Fortunately, I’ve grown to like sweet potatoes more (they are Paleo-approved), and they’re a pretty awesome substitute for regular potatoes. I decided to make these sweet potato home fries with bacon (I LOVE BACON SAFLKSAF), just because I figured that using the bacon fat would give the potatoes a ton more flavor, and also just because it’s natural :) If you would rather not include bacon (WHY??), that’s totally fine, and you can just substitute the bacon fat with any other oil.
Ingredients
- 1 large sweet potato
- 1/2 of an onion
- 3 slices of bacon *optional*
- Bacon fat (from the bacon) *optional* or any other oil
- Salt
- Pepper
- Paprika
- Dash of cayenne (optional)
- Any other seasonings (optional)
Instructions
- Heat the frying pan to medium heat
- Add the bacon to the pan and cook render out the fat
- Remove the bacon and chop them into small bite size pieces
- Add the sweet potatoes, and season with salt, pepper and any other spices
- Add the onions when the sweet potatoes are cooked halfway, but if you want crispier you can throw them in earlier
- Add the bacon back in and stir everything together
